Ingredients

  • 1 kg potatoes waxy
  • 1 red onion
  • 250 ml water hot
  • 1 teaspoon (homemade) vegetable stock powder or use 1 cup vegetable stock instead of the water & powder
  • 6 tablespoons oil neutral flavor, e.g. rapeseed or sunflower oil
  • 4 tablespoons apple cider vinegar
  • 1/2 tablespoons mustard
  • 1 teaspoon salt
  • some black pepper
  • fresh chives

Instructions

  • Cook the potatoes: Place the unpeeled potatoes in a pot of cold water and bring to a boil. Cook for about 20 minutes, until tender but not too soft. The exact cooking time depends on the size of the potatoes.
  • Prepare the onion and broth: Meanwhile, peel and finely dice the red onion. Place it in a large bowl, add the vegetable stock powder, and pour in 250 ml of hot water.
  • Make the dressing: Add the oil, apple cider vinegar, mustard, salt, and a little freshly ground black pepper to the onion and broth mixture. Stir well to combine.
  • Peel and slice the potatoes: Check with a fork whether the potatoes are cooked through. Rinse them briefly under cold water, peel, and slice while still warm. Don't cut the slices too thinly, or they may fall apart when mixed.
  • Dress the potato salad: Pour the warm dressing over the warm potato slices and gently toss to combine.
  • Let the flavors develop: Leave the potato salad to rest at room temperature for at least one hour. The potatoes will absorb much of the dressing, even if it seems like a lot of liquid at first. Only then taste and adjust the seasoning if needed.
  • Serve: Gently toss the potato salad once more and sprinkle with freshly chopped chives.

Notes

Make ahead: You can prepare the potato salad a day in advance. After the initial resting time, cover it well and refrigerate overnight. It tastes excellent cold, too.
