Ingredients

  • 500 g pasta e.g. fusilli
  • 200 g peas frozen
  • 285 g corn from a can, drained weight
  • 1 bell pepper any color you prefer
  • 200 g smoked tofu
  • 200 g dill pickles (gherkins)
  • 1 red onion

Dressing

  • 200 g vegan mayonnaise
  • 200 g vegan (soy) yoghurt unsweetened
  • 10 tablespoon pickle juice liquid from the pickles
  • 1 tablespoon mustard
  • 1 tablespoon sweet paprika powder
  • Fresh chives or parsley or dill, or a mixture
  • 1.5 teaspoon kala namak *) for an egg-like flavor, or regular salt
  • some freshly ground black pepper

Instructions

  • Cook the pasta: Cook the pasta in salted water according to the package instructions until al dente.
  • Prepare the vegetables and tofu: Meanwhile, place the frozen peas and drained corn in a large bowl. Cut the bell pepper, pickles, and smoked tofu into small cubes, and finely dice the red onion. Add everything to the bowl with the peas and corn.
  • Make the dressing: Mix the vegan mayonnaise, yogurt, pickle juice, mustard, paprika, herbs, Kala Namak or regular salt, and black pepper until well combined.
  • Drain the pasta: Drain the cooked pasta and rinse it only briefly under cold water so that it retains some residual warmth.
  • Combine the salad: Add the pasta to the vegetables and smoked tofu, pour in the dressing, and mix everything thoroughly.
  • Let the flavors develop: Cover the pasta salad and refrigerate until ready to serve, preferably for a few hours or even overnight. Stir well again before serving.

Notes

  • Servings: This recipe makes approximately 4–5 servings as a main course. As a side dish or part of a buffet, it serves more people.
  • Peas: You can also use canned, jarred, or fresh peas. I use frozen peas and add them directly to the salad while still frozen, where they thaw from the residual heat of the pasta.
