💚 Potato Goulash - Letscho - Baked Beans 🤤

If there is something I am not the best in, then it’s making decisions, in various areas in life. The last days, for example, I had cravings for #Letscho (a Hungarian stew made out of bell peppers), #Erdäpfelgulasch (an Austrian potatoes stew), and something like baked beans. It’s so cold here in Vienna, and I really needed a healthy, warming, hearty stew. 🥰
Today I had the solution: All in one! 🎰
On the side, I had #Ebly tender wheat. The last time I bought it was 15-20 years ago. But somehow it smiled to me from the self. And I liked it. 😋
In case you also can’t decide between Goulash, Letscho, and Beans 😜 here is what you will need and do with it:
For 3 plates 🍛🍛🍛
🛒 Ingredients
100 g beans (I had a “Cholent mix” from the Kosher supermarket, but use whatever beans you like. Soak overnight and cook for about 45 min. on the next day. Or simply get a small can of ready cooked beans)
1 onion
2 cloves of garlic
2-3 bell peppers
3-4 potatoes
1 pkg (approx. 200 g) smoked tofu
3 tbsp (rapeseed) oil
2 tbsp sweet paprika powder
1 tsp caraway seeds
½ tsp marjoram
1 bay leaf
½ tsp salt
1 splash of (e.g. apple cider) vinegar
3 cups of vegetable broth
400 g tomato passata
3-4 tbsp chopped parsley
2 tbsp flour
👩🍳 Preparation
Finely chop the onion and garlic.
Cut the bell pepper, potatoes and tofu into cubes.
Heat the oil in a saucepan and fry the onion and garlic until the onion turns translucent.
Then briefly fry the peppers, potatoes and tofu pieces.
Now add the paprika powder, caraway seeds, marjoram, bay leaf and salt.
Stir and deglaze with vinegar.
Add the soup, tomato passata, beans and parsley.
Simmer for about 20 minutes until the potatoes are soft.
Towards the end of the cooking time, stir in the flour with a few tablespoons of the sauce in a cup and return to the stew. As a result, everything thickens a little. Bring to the boil again briefly. Eat just like it is, or with a piece of bread, or wheat grains, rice, …
