Long time no see. 🤗

This vegan sweet braided coconut milk bread is a delicious twist on the classic brioche. It is moist, soft, and super fluffy, as we know and love it. With the addition of coconut, this brioche turns out into something special in an instant, but is still very easy and fun to prepare. It’s inspired after a recipe I got from @tahitianinhawaii 🙏 a while ago and still love to make it from time to time.

💚 Potato Pancakes “Bramboráky” 🥔
Recipe 🇬🇧👇 (🇦🇹 auf meinem Blog)

Hello everyone. 🤗 I just updated an old post. Same delicious recipe but with better photos and a recipe video for you. 💚

These potato pancakes here are crispy outside, soft on the inside, and very tasty, like the Czech specialty Bramboráky, which I got to know at the Austrian/Viennese restaurant „Schweizerhaus“. Let me show you how to easily and quickly make gluten-free vegan potato pancakes from raw shredded potatoes, without eggs, flour, onion, and milk (dairy-free).

🛒 Ingredients
1 kg (2.2 lbs) potatoes
4 cloves of garlic
1-2 tbsp potato starch (or 3 tbsp. flour if you don’t have potato starch and/or don’t care about gf)
1 tbsp dried marjoram
1 tsp salt
Nutmeg
Black pepper
approx. 10 tbsp oil (e.g. rapeseed oil) for frying

👩‍🍳 Preparation
Peel the potatoes and grate finely.
Place the shredded potatoes on a tea towel, hold the ends together at the top, and squeeze the liquid out of the potatoes as best you can.
Place the potatoes in a bowl. Press the garlic to the potatoes and add the potato starch, marjoram, salt, a bit of freshly grated nutmeg, and a little pepper.
Mix everything well.
Now heat approx. 5 tablespoons of oil in a pan and fry the first 3 pancakes. Ideally, form a ball from the mixture that is larger than a golf ball and smaller than a tennis ball. Place the ball in the pan and flatten with a spatula. The remaining oil is then gradually added after turning or used for the remaining pancakes.
Turn the potato pancakes when the edges start to turn crispy and continue frying on the other side until golden brown.
Drain on kitchen towel and serve hot.

Yes… I fail a bit with eating healthier in 2024. 🙈
But… 2024 just started. ;-) And I believe that balance is key.
These vegan pizza rolls are too tasty and fun to make to say no. 😉

The recipe itself is actually easy. It is just a bit longer (that’s why it doesn’t fit into a post) as it consists of three parts:

1. Pizza dough
2. Pizza sauce
3. Toppings = Filling

You can either make everything yourself (I love to do) or you buy the dough and sauce and keep it really simple. 🤌

💚 Vegan Potato Gratin / Dauphinoise Potatoes 🥔

Uncover the secret to crafting creamy and delectable dauphinoise potatoes without a drop of cream, thanks to a hidden veggie sauce featuring the dynamic duo of cauliflower and cashews. This healthy combination of potato cauliflower casserole and scalloped potatoes promises simplicity and sophistication in one dish. 🌱✨

🛒 Ingredients
1.5 tbsp vegan butter (or oil, with 0.5 tbsp for oiling the baking dish)
1 onion
2 cloves of garlic
500 g cauliflower (or 2.5 cups of florets)
3 tbsp cashews
1 tsp vegetable stock powder
1 tsp salt
700ml (3 cups) water
Approx. 1kg (2.2lb) mainly waxy organic potatoes
4 tbsp nutritional yeast
1/3 tsp ground turmeric
Black pepper
Nutmeg

Optional:
5 tbsp (60 g) grated vegan cheese
Fresh thyme leaves

👩‍🍳 Preparation
Preheat the oven to 150°C (or 300°F) fan circulation (or 170°C = 340°F top and bottom heat).
Peel and chop onion; leave garlic whole. Sauté in 1 tbsp vegan butter until translucent.
Divide cauliflower into florets, add to the pan with cashews, stock powder, salt, and water. Cook covered for 10 min.
Oil casserole dish, peel and thinly slice potatoes, layer in the dish.
Blend cooked vegetables, cashews, and liquid. Add nutritional yeast, turmeric, pepper, and nutmeg; blend until creamy.
Pour sauce over potatoes, add vegan cheese and thyme if desired.
Bake for about 50 min, then gratinate for 10 min at 220°C (430°F) with the grill function until browned.

These irresistible avocado spaghetti not only satisfy your craving for a rich and enjoyable meal, but are also very nutritious and healthy thanks to the avocado pesto. What’s more, this creamy avocado pasta is a perfect recipe for lazy days because it is so easy and quick to prepare in just 15 minutes.

🛒 Ingredients
250 g spaghetti
2 avocados
1 clove of garlic
3 tbsp olive oil
2 tbsp lime juice
2 tbsp nutritional yeast
6 tablespoons pasta cooking water
1-2 tbsp fresh basil and/or coriander
A pinch of salt (and a little more for the pasta cooking water)
Black pepper

Optional toppings
A few cocktail tomatoes, chopped
1 stalk of spring onions, the green part cut into thin rings
1-2 tbsp pine nuts, toasted in a pan without adding oil
some (homemade) vegan feta

👩‍🍳 Preparation
Cook the pasta.
In the meantime mix all the ingredients for the sauce: avocados, garlic, olive oil, lime juice, yeast flakes, pasta cooking water, and herbs in your food processor or small blender. Alternatively, you can mash the avocado with a fork, press or finely chop the garlic, and also finely chop the herbs and mix with the other ingredients. Tastes just as good, but not as creamy.
Drain the noodles, put them back in the hot pot, combine and mix them with the sauce - otherwise the dish will cool down too much. You can also mix in the tomatoes at the same time (and save a few for topping/garnishing).
Add toppings to the finished pasta as desired.
