Potato leek soup is a classic and delicious comforting dish. Originally made with creamer I use cashews which make this soup particularly creamy. Plus cashews are much healthier than any bought creamer. Furthermore, I added beluga lentils as a tasty soup inlay. Besides taste, and having something to bite on, they also provide an extra portion of protein.
