Refreshing Pineapple Cucumber Smoothie

If you are looking for a simple vegan pineapple smoothie recipe that is not only healthy, and quick, but also tastes so very good and refreshing, then I have a great combination for you: pineapple and cucumber, complemented with kiwi, celery, lemon juice (and/or lime juice) and fresh ginger. Pineapple smoothies are often associated with detox, cleanse, or weight loss. I aspire to neither, but prefer to make this easy smoothie recipe for breakfast, mostly because the mix is ​​so tasty and energizing. What is also great with this recipe: If you want to extend the pineapple and cucumber smoothie benefits and make a green smoothie, you can simply add some leafy vegetables or herbs.

Healthy and tasty

Smoothies with pineapple, but also smoothies with cucumber, kiwi, or celery are often described as mood enhancers, fat burners, immune busters, or detoxifying and are therefore an integral part of numerous detox programs. The sweet pineapple gets along so well with the refreshing cucumber, the sweet and sour kiwi, the fresh and spicy ginger, and the tart celery stalks. Add some lemon juice, water, and ice cubes – wonderful!

Easy to prepare

The preparation for this delicious pineapple smoothie is very simple: Cut the fruit and vegetables into pieces (since everything is mixed anyway, they don’t have to be small or pretty), put them in the blender, add water, and ice cubes, mix the ingredients, done. I’ll show you how easy it is in a short video at the end of this post.

If you want to drink your pineapple cucumber ginger lemon celery smoothie for breakfast but don’t have much time in the morning, you can also mix it up the night before and fill it in bottles for the next day (I like to use empty tomato sauce glass bottles for this). Alternatively, you can peel and chop the fruit and veg the day before and store them in a sealed container in the fridge until you are ready to blend them. Or you use frozen pineapple instead of a fresh one.

Making your pineapple cucumber smoothie with fresh ingredients just before you want to drink it is always the best option. But preparing it in advance or substituting something fresh with frozen is always better than not drinking it at all.

How to cut a pineapple

The hardest part of the whole pineapple smoothie thing is cutting the pineapple. And even that is not witchcraft, but proper peeling and slicing go hand in hand.

First, you cut off the top side where the leaves are coming out. You do the whole thing on the opposite side, where the stalk is. Don’t cut both sides too short. It should be a minimum of 2 cm each.

Next, put the pineapple upright so that it is now standing on the straight underside where the stalk used to be. With a knife, cut along the outsides to remove the skin. If you want to eat the pieces, then you should cut off a little more so that the spines are gone too. For a smoothie, it doesn’t need to be that exact because the pieces are mixed after all.

Now halve the pineapple lengthwise and then half that half again so that you end up with oblong quarters. If you ask yourself at this point “can I use the pineapple core in my smoothie?” then the answer is yes! For a good blender, that’s no problem! Speaking of a good blender…

Which blender for smoothie

If you don’t have a blender yet and want to get one, let me recommend the following: Please don’t use the cheapest device! No, a blender is definitely not the same as a blender. My last one also blended but is no comparison to my current device.

Two years ago, I finally had to get a new blender, but I didn’t want to spend a lot of money on it. 500 Euros were definitely too much for me. After endless research, I decided on the high-performance stand mixer KSB-300 from Kemar*) and my purchase none second regrets. This blender has power (1,500 watts and creates 23,000 rounds per minute, even strawberry and kiwi seeds don’t stand a chance) and is also inexpensive! I treated myself to the combination with the drying container, without it *) everything will be again a lot cheaper. BUT as this blender seems not to be available in the US (yet?) I tried to find a similar model *) for you. <3

Green smoothie

The color of this pineapple cucumber smoothie is already green. However, it is not a green smoothie in the true sense, since neither leafy vegetables nor herbs are among the ingredients. But you can easily change that because this combination is quite flexible. If you want to make a green smoothie with spinach, simply add a handful of fresh spinach leaves.

Arugula or kale is also a good addition to this smoothie with pineapple. Fresh mint, basil, and/or parsley are suitable herbs. And if you want it a tad sweeter and low sugar is not a topic for you, then use more pineapple or a banana (but then add a little more water or ice cubes).

But before you possibly start tinkering with my creation, let it be as it is. It’s delicious, I promise! And look how easy it is to prepare. In any case, lively music helps!

This easy pineapple cucumber smoothie also has ginger, lemon, and celery inside. It's not only a healthy combination but also refreshing and so good!

Ingredients

  • ½ pineapple
  • ½ cucumber
  • 2 celery stalks
  • 2 kiwis
  • 1 piece (about ½ thumb size) ginger
  • ½ lemon and/or lime, juice from it
  • 1 cup of cold water
  • ¾ cup (= approx. one small ice cube tray full) of ice cubes

Instructions

  1. Peel and cut the pineapple (see tips in the blog post).
  2. Cut the cucumber into pieces.
  3. Remove the leaves from the celery stalks (I suppose they blended in nicely, but I save them separately for my homemade veggie broth) and chop the stalks into chunks.
  4. Peel kiwi and ginger.
  5. Squeeze lemon (or lime).
  6. In your blender *) mix all the ingredients together with the water and the ice cubes.
  7. Pour into a glass and enjoy. Cheers!

Notes

  • Since everything is blended, the pieces don't have to be small or pretty.
  • The smoothie also tastes very good if it is blended the day before. Alternatively, you could pre-cut the fruit and vegetables, and keep the pieces chilled in a closed container until ready to blend.
