Beetroot Carrot Smoothie
This quick and easy beetroot carrot smoothie is enriched with fresh apples, ginger, and lemon, giving it a tasty blend of sweetness and freshness with a hint of spice and earthiness. It’s also a simple way to incorporate healthy ingredients into everyday life, all while enjoying its beautifully vibrant burgundy-pink color.
Beetroot to drink
I only ate beetroot as a salad from a jar for half my life—until I started exploring other ways to enjoy it. Since then, I’ve discovered beetroot curry and beetroot soup, both of which quickly became favorites. And ever since trying beetroot juice at a smoothie bar, I’ve been a fan of the beet in liquid form as well.
Not wanting to spend a fortune on smoothies and with my love for experimenting in the kitchen, I decided to create my own beetroot smoothie recipe.
As much as I enjoy beetroot—especially raw and in liquid form—it’s crucial to strike the right balance of flavors. Otherwise, the taste can easily feel too “healthy” or overly earthy.
Ingredients
During my smoothie test phase, which has been on and off over the years, I experimented with various combinations until I settled on the following recipe:
- Apple – or rather apples. This smoothie has more apples than beetroot, which is why you could almost call it an apple smoothie with beetroot. But this balance was necessary for the flavor. Even with three apples, the beetroot remains quite dominant.
- Beetroot – which is used raw. If you’re wondering whether pre-packaged, pre-cooked beetroot would work: I haven’t tried it, and probably wouldn’t. The flavor is noticeably different from fresh beetroot. Besides, this is supposed to be a smoothie, not a soup.
- Carrot
- Ginger – fresh ginger, not powdered.
- Lemon
- Water
- Ice cubes – I believe smoothies should be served cold, especially when made with beetroot and carrots, as this enhances their refreshing taste.
This smoothie combines three different tubers, complemented by two fruits. What you won’t find in this recipe, are ingredients like milk, banana, yogurt, or sugar.

Preparation
The preparation is straightforward:
- Peel the beetroot and cut into chunks
- Wash the carrot thoroughly, and peel it if necessary (if it’s not organic). Also cut it into several pieces
- Wash and cut the apples
- Wash the ginger well, and brush *) or peel it
- Squeeze the lemon
- Next, place all the fruit and vegetables in a blender along with ice cubes and water.
If you don’t have a blender but do have a juicer – or prefer to make beetroot juice instead – simply juice the beetroot, carrot, apple, and ginger, then mix the result with lemon juice, a little water, and ice cubes.
Alternatively, if you don’t have a juicer, you can follow the smoothie method and strain the solids. The best tool for this is a cloth*, like I use in my almond feta recipe, as it allows you to squeeze out the juice effectively.
I usually store any leftover smoothie in a glass bottle and enjoy it within a day or two. You can also prepare it in advance, making it a quick and convenient option for breakfast.
Beetroot Carrot Smoothie with Apple, Ginger, and Lemon

Ingredients
- 1 beetroot
- 1 carrot
- 3 apples
- approx. 5 g (0.18 oz) ginger (approx. 1 cm = 0.4 in thick slice)
- approx. 30 ml (1 oz) lemon juice (approx. ½ to 1 lemon)
- 1 cup of cold water
- A few ice cubes
Instructions
- Peel the beetroot and cut it into large pieces.
- Wash the carrot and clean or peel any unsightly areas with a vegetable cleaning brush *). Cut it into pieces.
- Wash the apples and cut them into large pieces (remove the core).
- Wash the ginger and briefly brush the thin skin clean or peel the ginger and cut off the slice.
- Squeeze the lemon
- Blend the beetroot, carrot, apples, ginger, and lemon juice with cold water and a few ice cubes.
- Serve cold. If not consumed immediately, store in a sealable glass bottle in the fridge and drink within the next two days.
